Superior Grade PansMay 13, 2009
By Charles M. Labow Heavy, well made pans. The removable bottoms are fabulous for use with certain "sticky" products. However, the Chicago Metallic release coating is VERY sensitive to damage or scratching. When they say "Do not use metal utensils" they mean it! Even the edge of a non-serrated butter knife will scratch the finish. But overall, an excellent product that I would not hesitate to purchase again.

By A. Benavidez The pans shipped pretty quickly. After using these pans, I love them. They bake evenly, the pastries slide out like a dream, they clean easily and seem to me very durable. So far they've only been used for cheesecakes and pies, and both baked perfectly.
The only thing is, I noticed that the removable bottoms scratched very lightly after rubbing against each other during shipping, and while washing them one of the bottoms got another scratch. You'd have to actually look for them, its not like the scratches are drastic and noticable, but I'd still suggest to be careful and try to avoid it. Despite this, They still seem durable and I'd recommend these to anyone who likes baking. [:

Perfect for pastry chefsMar 27, 2009
By Susan L. Rubendall I bought several of the Chicago Metallic nonstick pans designed for small pastries, such as quiches, dessert tarts, and teacakes. The pans are uniformly excellent. The pans don't leak. Food does not stick. Crusts brown evenly. I look forward to many years of making food that looks elegant and tastes good.

"Light Keeper"
I bought two of these tart pans and used them to make individual apple, cherry, and pumpkin pies for Thanksgiving. They were a huge hit and great fun. The pan is truly nonstick and very easy to clean. The tarts pop right out and the bottom disk comes off easily. I absolutely love these pans!

By Jane I have used this tartlet pan several times and it is awesome. The nonstick coating works great; the tartlets slide out easily. If you have an especially buttery crust, you might want to put a cookie sheet on a lower rack in the oven. I liked this pan so much I bought another one so I could make two batches of tartlets at once.
