2 Cups works better than 4 Cups to meJan 13, 2010
By R12345 Initially, I bought the bigger 4 cups of this separator, simply believing that "Bigger can do smaller jobs". However, I had a hard time to separate fat. My guess for why it did not work with 4 cup was the total amount of liquid was not enough to the level of fat to stay high. Yes, I was right. Everything works perfectly with this smaller 2 cup fat separator.
My recommendation is: Unless you do not have a huge amount of liquid, such as from big thanksgiving turkey, buy this 2 cups not 4 cups. Based on my experience, 2 cups is well enough for normal size of braising/roasting dishes. Moreover, if you have a huge amount of liquid, you just devide the amount into two batches and separate them twice. You have a flexibility to do so with this 2 cup separator but not with the larger 4 cup one.

By sharkychick I really cannot find any fault with this item. It does exactly what it says it does and is very easy to use. OXO is one of my favorite kitchen gadget companies, so you can't go wrong there.
The only recommendation I would make is that I wish I had purchased the 4 cup model. The 2 cup unit fills up faster than I had envisioned and when you get to the point of being full it is easy to create spillage because it starts seeping into the top part. When you pour it can be a problem if you have filled it all the way up. I'd like to have some comfort room so when I get my time machine, I will go back and purchase the 4 cup one instead! :)

By Janet Mizelle For anyone who is trying to cut back on their fat intake - - but still enjoys the juices from their roasts, etc., THIS is the ticket. It truly does separate the fat from the meat juices so that you can have the tasty gravy without all that unhealthy fat.

This works great. You have to put the little stopper in before you add the liquid. It keeps the liquid out of the spout and the fat is trapped floating on top in the main compartment. This separator couldn't work better. Get one instead of trying to skim fat off with a spoon. That's tiresome and this gets it all in seconds.

Product Instructions Very Vague, But Works Great Once You Figure It Out!Jan 10, 2011

I love the idea, but I've never owned one before, and I had a difficult time figuring out if I was using it correctly because the instructions that came with it are so vague. Actually, I found the instructions listed with the product here on Amazon to be worded much better. In case it might help anyone else, I've included them below.
STEP 1: Pour your gravy into the separator through the strainer and watch the fat rise to the top while lean gravy settles to the bottom. (The heat-resistant strainer catches unwanted bits and the stopper prevents fat from entering the spout.)
STEP 2: Once the gravy has settled, remove the strainer and the stopper and pour out perfect gravy. (A shield prevents fat from spilling over the top of the separator.)
