Great quality at a good priceFeb 16, 2012
By R. Dowling Over the past year or so, my beloved Circulon skillets have been losing their nonstick properties. The coating wasn't flaking or chipping, nor did it appear to be damaged in any way, but they just weren't nonstick anymore. I found myself having to use nonstick cooking spray in order to keep things from sticking... and when I went to Circulon's web site to inquire about warranty service, I learned that using nonstick spray automatically voids the warranty. I wish I had known that. Lesson learned, I guess. :-\
When I was in a big-box store a few days ago, I took a quick detour to the cookware section. Amidst all the crappy, featherweight junk, I discovered something very surprising: NordicWare Commercial cookware. I was impressed by the weight (not too light, not too heavy), the balance/ergonomics, and the quality of the nonstick finish, which felt exactly like what I remember All Clad's finish feeling like. They're made in the USA (amazing!), and NordicWare's web site doesn't list any weird things that void their warranty, so I went back the next day and bought the 8" and 12" skillets.
So far, with the 8" skillet, I've made two of the BEST omelets I've ever made. The pan heats evenly, sits perfectly level on the burner, the silicone hand grip is cool and comfortable, and food (even cheese!) slides out of the pan effortlessly. I cooked pork chops in the 12" skillet last night with similarly excellent results.
These might just be the most pleasant pans I've ever used!
I'll be sure to update this review in the future after I've had the pans for a while, but so far I'm very impressed with them, especially considering the price.
Great Pan!Mar 17, 2012
By Julie I have this pan in other sizes and love it! It works great! I have had problems of pans arriving with scraches on them, but this one didn't! :) I highly recommend this product!

Three years ago I bought the 8 and 10 inch sizes of these pans. I cook for one so these in these sizes the pans have been used very often. The non-stick finish has held up pretty well; no flaking, just slightly thinned/worn towards the center of the pan. These were never the kind of pans to break an egg in with no oil or butter - they don't need much more than a very light coating of oil, but some help is needed to ensure the food won't stick.
I recently started researching the safety of pan coatings and have concluded that a switch to non-coated pans is in order for me. I've been facing some health challenges in the past year and any little thing I can do to reduce my exposure to *any* potential toxin is something I'm willing to try. Since I cook quite a bit, this seems a good place to start.
I hate to retire these pans early since they have performed well but it's something I need to do. I recently purchased a carbon steel pan, two cast iron pieces, and a stainless steel stock pot. These new pans take some seasoning and different use/care methods but I've removed any concern about the possibility of coatings transferring to my food.
For most people, coatings are not an issue but if you are concerned about coatings as well, I recommend considering this line of pans:Paderno Heavy Duty Carbon Steel 12.5 Inch Frying Pan and those in cast iron made by Lodge.

By ohu812 This pan is top shelf and reminds me of the good stuff I used to work with everyday back when I was a chef. Like eggs? No need for a spatula anymore. This pan doesn't need one if you know how to flip the wrist.
